I had the absolute pleasure and privilege of an amazing meal at Apego and I would highly recommend to anyone who's in the city! The FOH was warm, welcoming and knowledgeable, I felt like I was amongst friends which was lovely because I was dining alone. The BOH was extremely focussed and thoughtful, each dish they created was stunning, well thought out and intentional. I enjoyed the stories behind the dishes, hearing about how they worked with local farmers, and seeing the techniques on the plate was really special. Her instincts around texture, freshness, and acidity are so precise they feel almost scientific. A plate of peas with lime shouldn't stop you mid-conversation. It did. Smoked and fresh asparagus side by side shouldn't make you reconsider everything you thought you knew about vegetables. It did. She doesn't dress produce up or hide it behind technique. She lets it be exactly what it is, then finds the single contrast that makes it transcendent. The progression of the meal felt genuinely seasonal, course by course, each dish with its own internal logic. Nothing was there for spectacle, there's no performative caviar, truffle, or fois gras. Everything earned its place. Then came the adzuki bean mochi with strawberry sherbet. The best dessert I have ever eaten. I'm not hedging that statement. Carla, Bruno, and Victor run the floor with the kind of warmth that doesn't perform itself. "Apego" means attachment in Portuguese, and you feel it. They're not reciting a script. They're genuinely happy you're there, and by the end of dinner, you're genuinely happy to know them. The prices are almost offensive in how reasonable they are. I would pay triple without blinking. I'd pay triple and consider it fair. Fly across the ocean. Book the table.
